, Holiday Cooking With Beer – Sierra Nevada Beer Cheese Sausage Wreath

Festive foods take on new meaning during the winter holidays, especially when made with serious craft beer. And it doesn’t get much better than beer, cheese and sausage, right?

This recipe comes our way from Chico, California-based Sierra Nevada Brewing and it uses the brewery’s Celebration IPA, a 6.8 % ABV Fresh Hop India Pale Ale, that’s widely available during the holiday season.

For many Sierra Nevada’s annual Celebration release marks the official start of the winter holidays and given that you’ll have some left over, it’s also the perfect companion while you’re cooking.

Ingredients

1/4 cup Celebration Fresh Hop IPA

1 lb sausage, casings removed

1 1/2 cups mozzarella cheese, shredded

2 x 8-oz packages of refrigerated crescent roll dough

Directions

Step 1

Heat oven to 375°F.

Step 2

Heat a skillet over medium-high heat. Add sausage and cook, breaking up with a spoon, until browned. Remove sausage with a slotted spoon and let cool in a large mixing bowl.

Step 3

Add mozzarella and Celebration IPA, stirring well to combine.

Step 4

Open packages of crescent rolls, and separate into triangles. On a parchment-lined baking sheet, arrange dough evenly in a circle, with the pointed ends facing out and ends overlapping.

Step 5

Spoon sausage and beer cheese mixture around the center of the ring. Bring the pointy tip of the dough over the sausage mixture, and tuck its end under the inside of the circle. Repeat for all dough triangles until all the filling is enclosed.*

Step 6

Bake in oven for 20–25 minutes, until golden brown. Remove from oven and let cool for 5–7 minutes before serving.

*For a glossy surface, brush the outside of the dough wreath with an egg wash.
