Cooking With Beer – Lost Highway Double Black IPA Chili

Festive foods take on new meaning when made with serious beer. And as we look to fall, it’s time for more cold-weather offerings, like artisan chili made with a brilliant Black IPA.

This recipe comes our way Flagstaff Arizona-based Mother Road Brewing and it celebrates the return of Lost Highway Double Black IPA, an 8% ABV limited release with hints of bitter orange chocolate and dark caramel notes, that debuted at their taproom on Oct 18^th.

Capped off by the moderate bitterness we were looking for, it’s an incredibly versatile beer for cooking, and very tasty on its own.

So let’s do this!

Lost Highway Double Black IPA Chili

Ingredients

1 can (16 ounce) Lost Highway Black IPA

1 pound 85% lean ground beef

2 tablespoons chili powder

2 tablespoons tomato paste

3 garlic cloves, minced

1 1/2 teaspoons ground cumin

1 (15 ounce) can kidney beans (rinsed)

1 (15 ounce) can tomato sauce

1 (14.5 ounce) can diced tomatoes

1 1/2 tablespoons soy sauce

1 1/2 teaspoons packed brown sugar

1 teaspoon minced canned chipotle chili in adobo sauce

Salt and pepper

Vegetable oil (spray)

Instructions

Lightly spray inside of slow cooker with vegetable oil spray.

Add beef to a sauté pan along with chili powder, tomato paste, garlic, and cumin and cook until beef is no longer pink, about 5-7 minutes.

Transfer mixture to prepared slow cooker, breaking up any large pieces of beef with a spoon.

Stir in beans, tomato sauce, tomatoes and their juice, Lost Highway Double Black IPA, soy sauce, brown sugar, chipotle, ½ teaspoon salt, and ½ teaspoon pepper.

Cover and cook until beef is tender, 5 to 6 hours on low or 3 to 4 hours on high.

Using a large spoon, skim excess fat from surface of chili. Break up any remaining large pieces of beef with spoon.

Season with salt and pepper to taste, and serve.
