Founders All Day IPA is the ultimate “jack of all trades” especially when you’re looking for a beer flush with flavor yet light in body. And unlike many IPAs it’s a great beer to cook with that satisfies an array of palates and recipes.
We recently featured the brewery’s popular All Day IPA, a 4.7% ABV Session India Pale Ale, in a mac & cheese dish that’s terrific, as well as in a crab cake recipe that nails it. But it also works when used as an ingredient in this lemon bar.
This bright and buttery All Day IPA Lemon Bar recipe comes our way from Justin Golinski Culinary Director at Founders Brewing in Grand Rapids, Michigan and it’s relatively easy to pull off.
So let’s do this!
Founders All Day IPA Lemon Bars
Crust Ingredients
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 cup butter, softened
Directions
- Preheat oven to 350 degrees.
- Stir ingredients until combined.
- Press into 13×9 baking dish and bake for 20-30 minutes until just barely golden brown.
- Remove from oven and allow to cool down a bit before pouring the topping on.
Topping Ingredients
- 4 eggs
- 2 cups white sugar
- 1/3 cup lemon juice
- 1/3 cup All Day IPA
- 2 tsp lemon zest
- 1 tsp lemon extract
Directions
- While the crust bakes combine all ingredients until smooth.
- Pour over crust carefully and return to oven.
- Bake for 45 minutes or until golden brown.
- Allow to cool before cutting and serving.
- Dust with powdered sugar if desired.
