One of the things that we enjoy about SAVOR, in addition to the beers themselves and the wonderful foods pairings, are the unique Salons occurring nightly. These carefully curated Salons allow attendees a quiet respite from the Grand Tasting in the National Building Museum’s Great Hall and a private space where they can learn more about brewing techniques and sample “special reserve” beers with some of the industry’s masters.
The SAVOR Salons being offered this weekend are as impressive as they are diverse. And even though they required a separate ticket purchase in addition to SAVOR’s general admission, every Salon sold out quickly because they we’re all so incredibly cool.
So here are just a few of the sold out SAVOR Salons being presented this year that we wished we could have attended.
A History of Wood Aged Beer
Friday 6:15 pm – 7:15 pm
PC Suite 1 Salon
Presenter: Peter Bouckaert, New Belgium Brewing Company
New Belgium’s Peter Bouckaert is an author and master of wood-aging beer and in this Salon he’ll be exploring the intimate role wood has played in the history of beer and discussing all its attributes. He’ll explore all the incredible flavors that wood can impart on beer, dive into various historical wood aging techniques and explain why wood remains an exciting ingredient today. And best of all you’ll get to sample all kinds of special wood-aged beers that he’s created – Plzzzzzzzzzzzzzzz!
IPAs Across the Country

Presenters: Steven Pauwels, Boulevard Brewing Company; Rick Champan, Coronado Brewing Company; Matt Brophy, Flying Dog Ales
IPA’s continue their reign as the most popular style in all of craft beer so it’s no surprise that this salon sold out almost immediately. Join three seasoned brewmasters as they discuss the IPA and how it differs from region to region. They’ll be showcasing their own IPA’s and you’ll get to enjoy them paired with the brewer’s favorite charcuterie and cheese selections. Awesome right?

Lagers are making a huge comeback in craft beer and today’s craft brewers are putting their own spin on the classic style and creating intensely flavorful lager beers. Join two of the nation’s leading experts of the style as they showcase their gold medal winning lagers and describe what makes them different from ales. Two of our favorite people talking beer – what’s not to like?
SAVOR Collaboration Beer

Presenters: Heavy Seas Beer & Yards Brewing Company
This year’s SAVOR commemorative beer comes from a collaboration between Baltimore’s Heavy Seas Beer and Philadelphia’s Yards Brewing Company. Both breweries have strong ties to British brewing traditions, traditions that are reflected in their Philtimore Collaboration Ale, which also features an American twist to the beer. Hear the story behind the beer, taste it before anyone else and try additional beers from each brewery. The Savor Collaboration Beer Salon is one of SAVOR’s hottest tickets and we’re bummed we couldn’t get in this year.
